A: At Kanguri, we understand that honey crystallization is a common concern for many.
Firstly, the most imporatant thing to remember is that:
Crystallized honey is not an indicator of spoilage or poor quality. Crystallized honey is safe to eat and retains its nutrients and taste.
Crystallization is a completely natural process and a good indicator that the honey is pure and authentic, not a sign of decline or spoliage.
Honey often crystallizes, becoming cloudy, thick or hard, due to a natural process where the sugars separate and form crystals over time.
This is most common in raw or less-processed honey and happens because honey is a supersaturated mixture of glucose and fructose.
When there's not enough water to keep all the sugars dissolved, the glucose will begin to form crystals. This is a natural and spontaneous process that can be influenced by factors such as storage conditions, floral source, and temperature.
Raw honey, which contains bits of pollen and natural particles (the good stuff!), provides surfaces for crystals to form and is more likely to crystallize than heated, filtered honey.
Cold temperatures and prolonged storage accelerates this process, so honey left in a cool pantry or in winter will crystallize faster.
The nectare sourse (the type of flowers bees visit) also affects how quickly and in what way your honey crystallizes - some typer turn grainier or creamier than others.
It is very imporatnt to remember that:
CRYSTALLIZED HONEY IS NOT AN INDICATOR OF SPOILAGE OR POOR QUALITY. CRYSTALLIZED HONEY IS SAFE TO EAT AND RETAINS ITS NUTRIENTS AND TASTE.
CRYSTALLIZATION IS A COMPLETELY NATURAL PROCESS AND A GOOD INDICATOR THAT THE HONEY IS PURE AND AUTHENTIC, NOT A SIGN OF DECLINE OR SPOILAGE.
Some people even prefer if for spreading or baking, and it can be easily liquefied by gently warming the container in warm (not boiling) water.
If you prefer your honey in its liquid state, simply place the jar in warm water and stir gently until the crystals dissolve. Please refer to our specific FAQ: 'What do I do when my honey crystallizes?' for further details.
Using an Oven:
Place the honey jar (preferably glass) in your oven, ideally between 35°C-43°C. It should take about 15-30 minutes to de-crystallize.
Using Bowl of Warm Water:
You can also place the glass honey jar in a bowl or pot of warm water, between 35°C-43°C.
Stir gently and avoid letting water get into the jar.
Leave the jar in warm water for about 15-30 minutes, occasionally stirring until all crystals disolve and the honey returns to liquid.
If the water cools, replace it with new warm water to maintain the level of heat.
Once decrystallized, store honey at room temperature in a sealed container, to prevent future crystallization.
Alternative Method:
Place crystallized honey jar in a sunny spot for natural, slow liquefecation.
IMPORTANT:
Do NOT use a microwave or boiling water, as excessive heat will damage the honey, destroyng all its beneficial nutrients, natural enzymes and antioxidants.

5. Creamed Honey - Is a form of pure honey that has been carefully processed and deliberately crystallized to achieve a thick, smooth and spreadable texture similar to butter. It has a velvety mouthfeel rather than the coarse crunch of naturally granulated honey. It’s pure honey, with no additives — just carefully managed crystallization.
Our Store will supply the above honeys when they become available, and are reliant to the specific flora available at certain times of the year on Kangaroo Island.
